This wine was produced using the petillant naturel method. The fruit was destemmed, gently crushed, and pressed into a stainless steel tank to ferment until it dropped to 1.1° Brix. It was then bottled under crown cap and allowed to finish fermentation over the course of one month. The wine was then naturally cold-stabilized by placing the bottles outside in the chill of Vermont’s winter, and riddled by hand in December 2022 and January 2023. It spent one month on lees before being disgorged by hand with no dosage.
